Now that we're in Bologna where it's all about me me meat, we're seeing fresh pasta as opposed to dried. For those who don't know, dried pasta isn't inferior at all; it's just used differently. Seafood dishes usually use dried pasta so that's what we mostly saw while in Sicilian coastal towns.
